There are more than twenty different kind of olive-trees, - different in growth, leaves and type of olives. On the left and below a bunch of ripe olives of a beautiful "Lecciolo"
At autumn green, yellow, violette and black olives can be seen on the same tree - even on the same branch
During the harvest a big piece of cloth - usually an old parachute - is laid around the tree to collect the olives which are stripped off the branches. The harvesting is being done standing on the parachute, on the ladder and on the tree.
The olives are either plucked by hand, or torn off the branches with rakes and pliers.
The olives thus collected are brought to the oil-mill, where they are washed and then crushed by two huge granite mill-stones.
The olive-paste is spread out on mats, which are piled up in a heap of twenty-five and placed in a hydraulic press.
The pressure of 600 bar extracts an oily liquid, which is washed away with fresh water and pumped to a centrifuge to separate the oil from all impurities: the result is pure olive-oil.
 
With this method we produce the oil of our 250 olive-trees, which is conserved in big glassballoons in the cellar.
